Keto Chocolate Chip Cookies
The Keto diet sucks. But do you want to know what sucks even more? Being 34 years old and not being able to loose your baby weight no matter how many crunches you do, or spin classes you attend, or personal trainers you hire, or calories you count, or disgusting kale smoothies you drink for breakfast lunch and dinner, and having a closet full of super cute clothes that you can't even touch because of the perma-pooch you've obtained from housing and growing three human beings that are the type of kids who are abnormally HUGE for their ages!!! *gasp* Sorry there. But seriously, as gross as the Keto diet is (my bacon is sick of me at this point) I've lost two dress sizes in as little as one month! One month! I don't know about you sister but I'll eat under the rules of any diet if it causes me to loose that much weight that quickly. I'm just now getting back to my pre-baby "base weight" so I've decided to do this Godforsaken diet for one more week (or two) just for good measure. So today when I went to go for one of my few keto-approved snacks, I looked at my bacon, pickles, and string cheese and felt a pang of misery because I just wanted something crunchy darn it! Something crunchy and sweet. I wanted a flipping cookie. There always seems to be a point in a diet where you start seeing a mirage of the foods you wish you could have, and for me today that was a cookie. My mirage I saw was me and Cookie Monster mowing down on delicious, crunchy, sweet cookies with all the guys from the movie 300. (Okay so maybe that last part is part of a different mirage). So I did what any normal gal would do...snapped myself out of it, grabbed my artificial sweeteners and almond flour and did my best to whip up a batch of keto-approved goodies with a whopping 11g of fat and 1.5 net carbs per cookie. Are they wonderful? No. Are the terrible? No. Do they do the trick? Not really but it'll have to. In all honesty, out of all the keto-snacks I'm allowed to have, these were the best of all the options. Thus is why I decided to share them with you. Incase you too are suffering through this diet and need a snack outside of walnuts, pork rinds (blllech...I can't even), and cheddar cheese. Enjoy these cookies in the mean time, and in a week or two I'll share with you a recipe that will actually knock your socks off. I have the original Mrs. Fields Chocolate Chip cookie recipe! And guess what? When I'm done with keto, you better believe the first thing I'll be doing is whipping up a double batch of those, pouring myself a tall glass of 2% milk, and plopping myself down in front of the best movie ever made, aka 300.
Ingredients:
1 Cup Almond Flour
4 Tbs Coconut Flour
1 tsp xanthan gum
1/2 tsp baking soda
1/4 baking powder
1/4 salt
6 Tbs butter
10 Tbs Swerve (or another sweetener that measures the same as sugar)
1 tsp vanilla extract
2 eggs
1/4 Cup sugar-free chocolate chips
Directions:
Pre-heat your oven to 350F
Mix together dry ingredients.
In a separate bowl, cream butter and Swerve. Add vanilla and eggs.
Slowly stir in dry ingredients.
Mix in chocolate chips.
Bake for 8-10 min.
Let cool.
