Keto Wild Berry Muffins
I gained an enormous amount of weight with this most recent pregnancy....like a lot of weight (hello sugary bread cravings!) My body ballooned up like Baymax from that robot kid movie, and after giving birth it all stayed put. I don't know if it was because I'm 10 years older than I was when I started having babies (a 24 year old body is way different than a 34 year old body), or if it was because instead of craving peanut butter or pickles like normal pregnant ladies, I craved sheet cake and muffin tops. Awesome. Around this same time my wonderful husband (whom I do love dearly I swear to goodness) decided to get into epic shape for his upcoming cycling season. And by epic I mean epic. He started lifting, doing enormous amounts of cardio, and to top if all off he lost 40 pounds by trying the new and trendy Keto diet. 40 pounds. He lost 40 pounds. While I was as fat as I'd ever been in my entire life. I know what you're thinking, what kind of a horrible person loses and epic amount of weight while his wife is the size of an inflatable robot who looks like a marshmallow sumo wrestler?! My husband is! That's who! And if you're congratulating me for still being married to him, then I say to you: Thank you. It was a hard feat but I came through in the end. BUT, upon seeing my hubby's amazing results, I realized the Keto diet is so amazing! Seriously people! It's like a magic wand that totally melts all your fat away! I'm nursing my baby, so I waited until she was fully on solid foods before I started the diet myself to ensure she still got enough carbohydrates and sugar, and then I went to town. Now I have to admit, doing full keto is hard. In fact it can down right suck. That is until you find Keto friendly foods and recipes that mimic things you actually like to eat, and in my case that would be muffins. Thus I came up with this ah-mazing recipe for Wildberry Keto Muffins and I recommend you try them right away!
Wildberry Keto Muffins
Prep Time 15 minutes
Cook Time 25 minutes
Servings 12 muffins
Calories 260, Total Fat 23g, Net Carbs 3.5,g Sugars 2g
Ingredients
- 1 Cup Almond Flour
- 5 Tbls heavy cream
- 1/3 Cup blackberries & raspberries
- 2 Tbls swerve sweetener
- 1 large egg
- 1/2 Tbls baking powder
- 1/4 teaspoon sald
- Cupcake liners
1. Position rack in the center of the oven. Preheat to 350 F. Prepare a muffin tin fitted with liners.
2. In a bowl, add dry ingredients. Whisk until well-mixed.
3. Add heavy cream and beaten egg into the bowl. Stir together until well mixed.
4. Gently old in berries until well distributed.
5. Divide the batter among muffin liners.
6. Bake until tops are golden, and a toothpick comes out clean, about 25 minutes.
